Directions

Step 1

In a blender add following ingredients almond / cashew, ginger, garlic, green chilies, onion, tomato, garam masala, coriander powder, cumin powder, nutmeg, candlenut, fennel powder, turmeric, paprika, salt, black pepper powder, poppy seeds, brown sugar, lemon without skin and deseeded, coriander leaves, vinegar, yogurt, water blend it for 3 minutes.

Step 2

In a pot add extra light olive oil and chicken.

Step 3

After add step 1 blended ingredients.

Step 4

In the same pot add following ingredients basmati rice, saffron, rose water, bay leaves, cardamom, cinnamon stick, cloves, star anise, black peppercorns, raisins, cashew nuts, grated carrot, cumin seeds.

Step 5

Add broth, clarified butter mix well.

Step 6

Cook in medium heat in onepot/smart cooker/rice cooker/pressure cooker for 35 minutes.

Step 7

Serve immediately with extra virgin olive oil 1 tablespoon, onion raita and tomato salsa

Conclusion

A. To cook long-grained white rice, Standard water and rice ratio is 2:1 (2 cups of water for every 1 cup of rice). With this recipe we have added chicken so, to avoid the excess moisture which results in the rice being mushy we have to reduce the water level to 1/4 cup of water for every 1 cup of rice, and that's how we can get the perfect fluffy rice. Therefore we mentioned 20% broth in the recipe.
